Southern Double Fried French Fries
Ingredients:
5 to 6 Idaho or Russet potatoes
Kosher salt to taste
Black pepper to taste
Tony Chachere’s original creole seasoning to taste
Peanut oil
Cut potatoes into french fries with the peelings left on. Fry in peanut oil at 350°. Remove the french fries for 10 minutes and let them cool. Put them back in the peanut all at the same temperature until they are a golden crispy brown. Season with all seasonings to taste. EAT while hot!!
Fried Largemouth Bass
Ingredients:
10 to 12 bass fillets
One cup of white or yellow self rising cornmeal
Kosher salt to taste
Black pepper to taste
Tony Chachere’s original creole seasoning to taste
Peanut oil
Mix all dry ingredients together and place in a Ziploc bag. Place the fillets inside bag and shake vigorously. Fry in peanut oil at 350° until golden brown. EAT!!
Southern Hush Puppies
Ingredients:
2 cups of self rising cornmeal
2 tablespoons of self rising flour
Half a teaspoon of kosher salt
Half a teaspoon of black pepper
Half a teaspoon of Tony Chacheres original creole seasoning
1 tablespoon of mayonnaise
1 tablespoon of spicy brown mustard
1 tablespoon of ketchup
2 tablespoons of peanut oil
One medium chopped white onion
1/2 cup of butter milk or whole milk
Mix all ingredients together and let stand for 15 minutes. Cook in peanut oil at 350° after you’ve cooked your french fries and fish. Dip your spoon in water each time before you drop a hush puppy. Eat & Enjoy!!
Southern Fried Potatoes With Peelings
Ingredients:
Six medium Idaho potatoes cut up w/peelings
One cup of peanut oil
Kosher salt to taste
Black pepper to taste
One chopped medium white onion
Tony Chachere’s original creole seasoning to taste
Cook all ingredients together in a cast-iron skillet at 350° until golden brown and tender.
New York Strip Steaks
Ingredients:
Two 1 1/2 inch thick New York strip steaks
2 tablespoons of peanut oil
Kosher salt to taste
Black pepper to taste
Tony Chachere’s original creole seasoning to taste
Lay out steaks for 30 minutes.
Coat steaks with peanut oil.
Sprinkle kosher salt, black pepper and creole seasoning on both sides.
Cook on a charcoal grill at 500° to your liking.
Let steaks rest for 5 minutes.
EAT!!!
Cole Slaw
14 ounce coleslaw mix
1/2 cup mayonnaise
1/4 teaspoon kosher salt
1/2 teaspoon coarse ground black pepper
Mix all ingredients together. Serve and eat immediately
