Today’s recipe is for this cracking Cowboy Stew. It’s brilliant if cooked on your camper gas stove, over the embers of a campfire, cowboy style or even cooked at home on a school night!

COWBOY STEW
Feeds: 4
6-8 good quality sausages
1 onion, chopped
4 cloves garlic, finely chopped
1 chilli, finely chopped
1 can mixed beans in water, drained
1 can tomatoes
1 can baked beans
Salt & Pepper
Fry the sausages until well coloured.
Add the onions and sweat down until softened.
Tip in the chilli & garlic and fry for a couple more minutes.
Finally tip in the three cans, bring to a boil then cover and let simmer for 10-15 minutes or until the sauce has thickened and the sausages have cooked through.
To stretch it to feed more, serve with rice, pasta or crusty bread.
Basic Version
Substitute canned hotdogs for the sausages, and dried chilli flakes for the fresh chilli.
