**EASY CHICKEN SATAY CAMPFIRE RECIPE**
Serves: 2
Ingredients:
2 chicken breasts, sliced long ways
1 heaped tablespoon peanut butter (I uses crunchy, any is fine)
165ml can full fat coconut milk
1 tablespoon soy sauce
1 tablespoon sugar
1 tablespoon Thai green/red curry paste (do no use a curry sauce – there will not be enough flavour in a paste)
2 garlic cloves, minced
1/4 fresh lime, juiced
Wooden or metal skewers
Directions:
Soak the wooden skewers for at least 30 minutes in cold water.
In a small bowl whisk together the peanut butter, coconut milk, soy sauce, sugar, curry paste and garlic.
Place the raw chicken into a plastic tub or ziploc bag. Pour over 1/3 of the satay sauce and mix well so all is coated.
